Angi's Pot Roast
Equipment
- Baking pan or casserole dish
- foil
Ingredients
- 4 lb chuck roast (or other preferred cut)
- 1 lg onion
- 1 pkg baby carrots
- 10-12 baby red potatoes
Instructions
- Preheat oven to 300ºF
- Line baking dish with foil *see notes
- Place roast in center of pan
- Rinse your potatoes and place around meat
- Dump bag of baby carrots into pan
- Chop your onion in half and peel off the first couple outside layers
- Peel the layers apart and place over the top of the roast and veggies
- Cook in over on center rack for 4 hours **see notes
- Let rest for 15 minutes then serve
Notes
(*) I usually take 2 strips of foil almost twice as long as my baking dish, mesh them together in the center so it's like a HUGE piece of foil
