Angi’s Pot Roast

Angi's Pot Roast

Prep Time 15 minutes
Cook Time 4 hours
Servings 6

Equipment

  • Baking pan or casserole dish
  • foil

Ingredients
  

  • 4 lb chuck roast (or other preferred cut)
  • 1 lg onion
  • 1 pkg baby carrots
  • 10-12 baby red potatoes

Instructions
 

  • Preheat oven to 300ºF
  • Line baking dish with foil *see notes
  • Place roast in center of pan
  • Rinse your potatoes and place around meat
  • Dump bag of baby carrots into pan
  • Chop your onion in half and peel off the first couple outside layers
  • Peel the layers apart and place over the top of the roast and veggies
  • Cook in over on center rack for 4 hours **see notes
  • Let rest for 15 minutes then serve

Notes

(*) I usually take 2 strips of foil almost twice as long as my baking dish, mesh them together in the center so it's like a HUGE piece of foil
(**) Cooking times may vary depending on the size of your roast. Here is an easy-to-follow guide:
      • 3-4lbs - 3.5 hours
      • 4+lbs - 4 hours
      • 5+lbs - 5 hours
